Oishii Shrimp are brought to the plant live via aerated transport, similar to aquariums. Upon receival, shrimp are put into an ice bath. The temperature shock is instantaneous and the shrimp’s body & nervous system functions cease immediately. All further processing occurs after this procedure to ensure shrimp are not being handled live.
Typically, the standard in the industry is to bring raw material in via ice vats/slurry to keep the product cold during its 4-8 hour trip from farm to plant. During this time, the raw deceased shrimp typically picks up water weight and has a soak effect to the product.
This standard process has been completely eliminated in the Oishii program. Oishii shrimp arrive live to the plant and are processed immediately. This rapid process is similar to how the chicken, poultry and pork industries have operated for decades. The moment mortality occurs, protein and molecular structures begin to break down inside the body, no matter if it’s a shrimp or cattle. During the Oishii program, we lessen the time from live to frozen within 4 hours, in comparison to the 12-16 hours typically seen.

Oishii Shrimp is currently BAP 3-star certified and is in progress of attaining 4-star certification.
Oishii Shrimp are completely all-natural. All shrimp are free from artificial preservatives, phosphates and antibiotics. There are no added hormones meaning the shrimp is 100% chemical-free.
OIshii Shrimp come from Thailand and Vietnam and are produced under strict supervision and guidance to ensure the highest level of quality is achieved.
Both are the ideal environment for Oishii Shrimp due to their climate and relation to our quality assurance team locations.

Mazzetta Company, LLC & CP Foods are not the first to utilize live processing in the shrimp industry. We do believe we are the first to offer a product like Oishii Shrimp on an extensive scale with so many meticulous details to ensure the product quality despite the size of operation. The planning and organization of Oishii Shrimp program has been in development for nearly a decade.
A majority of Oishii shrimp will be U15 and larger. Currently we can offer U8, U10, 8/12, 13/15, 16/20, 21/25 and 26/30. Additional sizes and formats are in development.
